If i make a manifold from copper pipe to use
in a mash tun, should the slots in the pipe face
up or down. My thinking is the elbows and T-joints
are going to hold the pipe off the bottom enough
to turn the slots downward, therefore drawing out
more liquid.

Down.  The weight of the grain will tend to plug the holes otherwise ... or
at least, that it the way it seems to me.
