What is a good way to finish open grain woods like oak on the lathe?  I
would like to obtain a smooth finish with the grains filled.

A good method is to apply successive coats of sealer rubbing down between
coats until the pores are filled. This is time consuming, so you can use a
proprietary grain filler sold as a thin past colored to match various
timbers.
I find a water based one best.
