4 cups fresh mint
2 pounds honey
pectic enzyme (opt)
zest & juice of 2 lemons for acid (opt)
champagne yeast
Steep mint in 3 qts boiled water. Add honey- stir til honey dissolves.
Add pectic enzyme & lemons. Let sit over night with tight cover. Strain
into gallon jug. Pitch yeast. Add airlock. Rack after 2 weeks. Then Rack
every three months until clear. Bottle.
I prefer it chilled.

A few points - rec.food.drink is a better place to discuss liqueurs;
liqueurs are made from steeping flavorings in a neutral ***, rather
than fermenting or distilling, so you might not be able to get close enough
to "scratch" to suit; my liqueurs web page at least has a few good recipes
for coffee, though I think I've been remiss in adding the various mint
