I was driving by the local farmstand here in South Jersey and noticed there
were only 2 baskets of peaches left. I decided to pick one up as well as 12#
of raspberry blossom honey (awesome purple color). I diced the peaches into
3 gallons of water and boiled for about an hour. Then added the honey but
did not boil it as I have in previous brewings. This also did not produce
the normal scum at the top. After 30 minutes of heating with the honey I
added 2 teaspoons of lavender and 1 teaspoon of ginger. Smelled awesome.
Pitched the yeast (champagne yeast) and starter around 10 pm last night and
it was cooking this morning - I'll keep you up to date how it goes! hoping
to crack a bottle July 4th next year during our pig roast :).
