Try fortifying with Pear William which is distillate of pear wine.

You could also stop the fermentation when the specific gravity has dropped to
1.020 (leaving residual sugar) and then stop fermentation with neutral
spirits (Vodka or alcool). Poire Williams is much more expensive to use.
