When to use Campden?

Ok - bit confused on the use of Campden tabs.  I've got a 3 gallon
batch of peach wine thats been sitting in my ba***t for awhile -
never got to it since we've moved.  Its ready to be bottled but should
I add some Campden tabs just to be safe?

I've read in different books to use a tablet per gallon at each
racking.  Is this correct?  PLus using them again at bottling?

My books say 1 per gallon at every other racking starting with the first.

I use them only when the must is first mixed and 2 days before the first
racking. I use the equivalent of two campden tablets per gallon.

I have found it beneficial to put them a day or two before the first racking
as it seems to make the wine clear.

I wouldn't think it would be necessary at bottling as you have a high
*** level by that point.

   YES! Use them. 1 per gallon since it has been 'awhile'. Is the wine clear
and of good color? Taste some, and see how it tastes. Then go ahead and
bottle.

For your peach wine now: if it hasn't had any sulphite, I'd get some
to it ASAP (add one Campden tablet per gallon).

On general usage: many books say to use one Campden per gallon ever
2nd racking, though some say every racking. IMO, even one every 2nd
racking is excessive. For more try reading

Thanks - it has only been about 4 months since I did the batch and the
airlock has been stable and full.  This past racking was its 2nd so
I'm sure everything is fine.  I was just unclear about the campden
before bottling and during racking.
