How can i produce a basic wine from grape juice? What type of yeast do i use
and where can i get it? also what are the basic procedures ?

Easy recipe for a white

White
18 liters pure grape juice
6 liters water
1 1/2 kilos sugar
1/2 cup real lemon
wine yeast (from brewers supply houses)

1. Place sugar into a 25 liter container
2. Bring the 6 liters of water to a boiled and add to the container
3. Add grape just
4. add lemon
5. add yeast
6. Seal container with airlock
7. Let sit three weeks or until fermentation stops
8. Transfer to another container (rack off) leaving thew sludge behind (BTW
I save the part of the slug as a yeast starter for the next batch)
9. Let sit for 2 weeks in second container
10.  Bottle

Make sure everything the juice comes in contact with is sterilized, I think
cleanliness is the MOST important step. I use baby bottle sterilizer or just
plain bleach.

I don't like to contradict the advise given in a reply to a request but
this recipe is faulty.  Recipies such as these were used back in the
1950's and earlier when wine making supplies were not available in small
quantities to the home winemaker. (I have used some of them back then
but never was able to drink the wine.) Using lemon juice (citric acid)
instead of tartaric acid can produce some awful stuff. Water is rarely
added to fresh grape juice unless it is badly out of balance with too
much sugar or acid or flavour. Such as is sometimes the case with
Concord grapes.

My recommendation to Tmarkwiese is to do some further reasearch before
attempting to make wine.

 Most winemakers start by using kits which have simple and usualy easy
instructions for the novice winemaker to follow . Kits are available
from winemaking supply stores or supermarkets.
Fresh grape juice (in season) is avaliable from winemaking supply stores
and some supermakets -- look in the yellow pages or go to:

Making wine from fresh grape juice, or grapes,  is simpler than making
it from kits since the juice will normaly have acceptable sugar/acid
balances and the fewer additions such as pectic enzyme, DAP yeast
neutrient and the proper yeast are needed. No water is added. See:
