So, I thought I might put some potassium metabisulfite into solution
in a known concentration and then run vinoferm's free SO2 test to see
if it matches what I added. Does this make sense?
If so, to what should I add the KMBS? I don't want to use up my wine.
Would a weak acid solution work? Vinegar? Lemon juice? To a certain
pH?

If you add KMBS to plain old water, all of the potential SO2 (57% by
weight) will be there are free SO2, as there's nothing for SO2 to
bind to in water.
None of it will exist as moleular SO2, but that's not what you're
testing for anyway.

or how you tested? How to test a tester is good info.
