What is "properly trimmed?"  For example, if I trimmed my heli today in
a no wind environment then by next day I fly in an environment with
steady a 10 knot wind combined with sudden breeze of 5 knots, should I
trim the heli to fit the environment?

A helicopter is never completely "trimmed" for the reasons you just
gave. Trim the heli until YOU are happy with it. No one can tell you
what trim settings YOU want.
